Food Journals: Green Bean Salad with Feta & Tomatoes

As working parents, many of us struggle with coming up with healthy, easy-to-make meals that both kids and adults will eat.  I find that I often fall into the rut of eating the same monotonous meals over and over.  In an effort to find a better balance and have the whole family participate we are starting Food Journals!  It is a great way to get the kids involved and try new things.  Our first recipe turned out great.  We are grading it based on taste and ease of preparation which is essential on a busy weeknight!

Green Bean Salad with Feta and Tomatoes: A colorful tasty addition to the main course

 Ingredients:

  • 1-pound green beans

  • 5-6 cherry tomatoes chopped

  • ¼ cup olive oil

  • 2 Tablespoons white balsamic vinegar

  • Salt and pepper to taste

  • ¼ cup chopped fresh parsley

  • 2 Tablespoons diced red onion

  • 1 clove of garlic minced

  • 4 ounces feta cheese

 

Directions:

Bring a pot of lightly salted water to boil to cook the green beans until soft.  This is about 10 minutes.  Drain well then combine with tomatoes in a large bowl.

Stir together olive oil, white balsamic vinegar, salt, and pepper to taste in a small bowl.  Add the diced red onion, parsley, and garlic.  Pour the dressing over the beans and tomatoes and mix.  Mix in the crumbled feta cheese saving some to sprinkle on top.  Allow to sit for 20 minutes before serving.
